I have something to share with you.
Since I travel for work, I am always looking for an easy make-ahead meal for my family that my husband can heat and serve quickly. And of course it has to be something they both like! Lasagna is perfect BUT he likes it with meat and she likes it without.
SO I had to get creative. Rather than using a 9 x 13 pan, I grabbed my creme brûlée dishes that never get used(the only water bath going on in our house has a 6 yr old in it). I bought fresh pasta sheets at Central Market for lasagna and traced a circle with the ramekins. Then another. Not only was it super fast to assemble but my daughter helped me.
Recipe: Personal Lasagna
Ingredients:
- Pasta sheets
- Meat sauce and/or marinara sauce
- Ricotta mixture(I mix ricotta with egg and Italian spices)
- Italian spices
- Shredded or Grated Parmesan
- Shredded mozzarella cheese
Cut the pasta sheets into circle to fit in the ramekins. First add the sauce, then the pasta circle, then the ricotta mixture, add more spices, top with shredded cheese, then repeat. Cover with tin foil and bake for 35-40 minutes at 350. Then bake for another 5 minutes till cheese browns slightly. (I leave them in the refrigerator for them to reheat either a day or two later)
I got a call tonight from home while I was on the road….they loved it!!!
